Fresh Flour Banana Bread
Do you have extra ripe bananas to use? This whole grain banana bread is so tender and moist, not to mention being packed with fiber, B-Vitamins, Vitamin E, and more! For a special treat we occasionally add a delicious crumbly, crunchy topping (shown in the picture!). We love eating this banana bread while warm because we think it melts in our mouths, but if you let it fully cool it will be more setup and easier to transport if you are gifting the loaf to a friend. These bagels are absolutely delicious and are very fun to make! The quick boil in honey water gives them their iconic “chewy” exterior with a soft, dense middle that’s perfect for your favorite spreads and toppings. This recipe can easily be doubled; freeze and reheat bagels for an easy breakfast or lunch option.

YIELD: 1 loaf
INGREDIENTS:
1 ¼ cups Unsifted® Dessert Blend grain
¾ cup packed brown sugar
2 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 tsp ground cinnamon
¼ tsp ground nutmeg
½ cup unsalted butter, softened
2 large eggs
1 ½ cups ripe bananas (about 3-4 bananas)
1 tsp vanilla extract
CRUNCH TOPPING (optional):
¼ cup Unsifted® Dessert Blend grain
¼ cup unsalted butter, softened
¼ cup granulated sugar
½ tsp ground cinnamon
BANANA BREAD MIX-IN IDEAS:
- ½ cup chocolate chips
- ½ cup peanut butter chips
- ¼ cup pecans, chopped
- ¼ cup walnuts, chopped
- 1 cup fresh blueberries
- 1 cup fresh strawberries, sliced

INSTRUCTIONS:
1. Mill the fresh flour
Pro Tip: You can make this banana bread with either Dessert Blend or Basic Blend. Basic Blend will yield a slightly firmer loaf. Dessert Blend yields a softer loaf. We like mixing them half and half!
- Preheat oven to 350F
- Lightly grease loaf pan (1 lb.)
- Set WonderMill® dial to 12:00 (clock position)
- Mill 1 ¼ cups Unsifted® Dessert Blend grain
- Optional: Mill an additional ¼ cup Unsifted® Dessert Blend grain for topping then set aside ⅓ cup unsifted flour for topping in Step 5
2. Combine dry ingredients
- In a large bowl, add the remaining unsifted flour
- Add ¾ cup packed brown sugar
- Add 2 tsp baking powder
- Add 1 tsp baking soda
- Add ¼ tsp salt
- Add 1 tsp cinnamon
- Add ¼ tsp nutmeg
- Stir until thoroughly combined
3. Add wet ingredients + mix-ins
Pro Tip: Once the wet ingredients are added, do NOT overmix. Stir until just combined so the banana bread stays light and fluffy. We recommend using a Danish dough whisk.
- Add ½ cup softened butter
- Add 2 large eggs
- Add 1 ½ cups mashed ripe bananas (3-4 bananas)
- Add 1 tsp vanilla
- Optional: Add mix-ins (see variations to the right)
- Stir until just combined (do not overmix)
- Fill greased loaf pan ¾ full of batter
4. Mix crunch topping (optional)
- To the emptied mixing bowl, add ⅓ cup unsifted flour
- Add ¼ cup softened butter
- Add ¼ cup sugar
- Add ½ tsp cinnamon
- Stir until thoroughly combined
5. Add crunch topping (optional) + Bake
- Drop topping evenly across the top of the batter
- Bake at 350F for 45-50 minutes (190-200F internal bread temperature)
- Remove from oven
- Let the banana bread cool in the pan for 5-10 minutes (this helps it come out of the pan easier)
- Remove from pan and set on cooling rack
STORAGE TIPS
Cooled banana bread may be stored in an airtight container at room temperature for up to 4 days, or frozen for up to 3 months in a freezer bag.

PAN SIZING
The amount of banana bread batter varies depending on the size + quantity of bananas you use. We like to fill a 1 lb. loaf pan ¾ full and then put any extra batter into muffin tins (filled ¾ full) for banana bread muffins, or mini loaf pans to freeze or give away as gifts.

This Banana Bread makes a wonderful gift for friends and neighbors. We recommend letting it cool completely before gifting, so that it is easier to transport. Try using ¼ pound mini loaf pans to share with multiple friends!
