Overnight French Toast

Here’s a quick and delicious brunch recipe to wow your guests and make holidays feel extra special. This Overnight French Toast maximizes convenience, because it allows you to make it a day or two beforehand; just pop it in the oven 30 min before you’re ready to serve it the next day! There are several variations to make this dish never get old: blueberries, raspberries, streusel topping, blueberry sauce, etc.). You can even freeze it for up to 2 months, see pro-tips below!
This recipe combines the best of two recipes from Sally's Baking Addition and All Recipes into one delicious brunch treat! As always, we recommend using an Unsifted Simple Sandwich Bread of course. This featured picture uses the optional fresh blueberry sauce and is soooo delicious!!

INGREDIENTS:
4 cups Unsifted® bread cubes, divided (about 8 slices)
6 large eggs
1 ½ cups milk
2 tsp vanilla extract
1 Tbsp ground cinnamon
¼ tsp ground nutmeg (optional)
½ cup packed brown sugar
8 ounces cream cheese, cubed
1 cups fresh blueberries (sub: berry of choice)

INSTRUCTIONS:
1. Cube the Unsifted® bread
Pro Tip: Dry, stale bread works best for this recipe! We recommend setting cubed bread out on a drying rack overnight – this gets it extra dry and will help it absorb more of the egg mixture.
- Cut 8-10 slices of Unsifted® Bread into 1” cubes (makes about 4 cups of bread cubes)
- Set bread cubes out to dry, preferably overnight
2. Prepare the filling
- In a medium bowl, add 6 large eggs
- Add 1 ½ cups milk
- Add 2 tsp vanilla
- Add 1 Tbsp cinnamon
- Optional: Add ¼ tsp nutmeg
- Add ½ cup packed brown sugar
- Whisk together until no lumps remain, set aside
- Cut 8 ounces of cream cheese into ½” cubes, set aside
3. Assemble the casserole
- Lightly grease baking pan (9 x 13” for single recipe)
- To the greased pan, add 2 cups bread cubes evenly
- Sprinkle cubed cream cheese evenly
- Sprinkle 1 cup blueberries evenly
- Add 2 cups cubed bread evenly
- Pour egg mixture over layered bread cube mixture
- Press gently on top, pausing slightly with each press to coat the bread with the egg mixture
4. Let the casserole rest
- Tightly cover with plastic wrap
- Refrigerate 3-4 hours minimum (overnight preferred)
5. Streusel Topping
- Mill ¼ cup Dessert Blend on “Pastry”
- To a medium bowl, add all the Unsifted fresh flour
- Add ⅓ cup brown sugar
- Add ½ tsp cinnamon
- Add ¼ tsp nutmeg
- Cube 6 Tbsp butter (cold)
- Using a fork or pastry cutter, cut in cold cubed butter (pea sized)
- Before baking, sprinkle the streusel topping evenly over the casserole
6. Bake the casserole
Pro Tip: This recipe fits in a 9 x 13” pan, but to be extra careful we like to put a baking sheet on the rack below to catch any drips.
- Preheat oven to 350F
- Remove casserole from refrigerator
- Bake uncovered for 30-35 minutes, or until center is firm and top is lightly browned (internal temp 160-165oF)
- Remove from oven

STORAGE TIPS
Cooled French toast casserole can be stored in an airtight container in the refrigerator in for up to 5 days or frozen for up to 2 months in a freezer bag. This casserole makes great leftovers and reheats well!

MAKE-AHEAD OPTIONS
You can assemble this casserole ahead of time and bake it later. Store in the fridge for up to two days or in the freezer for up to two months.
Refrigerator (1-2 days ahead)
- After Step 4, store covered casserole in the refrigerator for up to two days
- To bake: proceed to Step 5
Freezer (up to 2 months ahead)
- Prepare the recipe through Step 3
- Cover tightly with plastic wrap AND aluminum foil
- Freeze for up to two months
- To bake: thaw overnight in the refrigerator, then proceed to Step 5
