Easy Berry Cobbler
This cobbler is literally the EASIEST thing to make. It is my go-to whenever I need a quick dessert and is a must-have for summer dinner parties (or anytime really)! It mixes together in just 10 minutes and uses our light and sweet Dessert Berry Blend. The top bakes into golden, crispy perfection with just the right amount of crunch, and I love to serve it warm with a scoop of ice cream on top. It’s the perfect summer treat for kids and adults alike! Plus, it's extremely versatile- you can use any fruit you have on hand. Fair warning: everyone will want seconds!
My friend Kristen is the ultimate hostess and she is the one who first introduced me to this Pioneer Woman recipe. Kristen often doubled the recipe and cooked it in a 9x13-inch pan for our small group get togethers. I’ve adapted the recipe to use Unsifted whole grain blends, which I think make it even more delicious (and nutritious)!
As an aside, I realize that there are many different types of cobblers. My young boys can't get past the fact that I usually make it in a pie dish. They refuse to call it cobbler, so instead they lovingly call it "pie cake". So there's another option for you too haha! Regardless of what you call it, you have got to try this! Trust me - you’ll be glad you did :)

PREP: 10 minutes
TOTAL: 1 hour 10 minutes
YIELD: 8 servings
INGREDIENTS:
¾ cup Unsifted® Dessert Blend grain
1 ½ tsp baking powder
¼ tsp salt
1 cup + 1 tbsp granulated sugar, divided
1 cup milk
½ cup unsalted butter, melted (1 stick)
2 cups berries, fresh or frozen
BERRY IDEAS:
- 2 cups mixed berries
- 2 cups blackberries
- 2 cups blueberries
- 2 cups raspberries
- 2 cups strawberries, sliced

INSTRUCTIONS:
1. Mill the fresh flour
- Preheat oven to 350F
- Set WonderMill® dial to “Pastry”
- Mill ¾ cup Unsifted® Dessert Blend grain
2. Combine dry ingredients
- In a medium bowl, add all the unsifted flour
- Add 1 ½ tsp baking powder
- Add ¼ tsp salt
- Add ¾ cup sugar
- Stir until thoroughly combined
3. Add wet ingredients
- Add 1 cup milk
- Add ½ cup melted butter
- Stir until just combined
4. Assemble the cobbler
Pro Tip: Be sure to rinse fresh fruit and pat it dry before assembling the cobbler (frozen fruit does not need to be rinsed or thawed)
- Lightly grease a 9” pie pan or 3-quart baking dish
- Pour batter into greased baking dish
- Sprinkle 2 cups berries evenly over the top of the batter
- Sprinkle ¼ cup sugar over the fruit + batter
5. Bake + Serve
- Bake the cobbler at 350F for 60 minutes (1 hour), or until golden brown and bubbly
- Optional: When 10 minutes of cooking time remains, sprinkle 1 Tbsp sugar over the top of the cobbler
- Serve by the spoonful and top with whipped cream, ice cream, or both!

STORAGE TIPS
Cooled crinkle cookies may be stored in an airtight container at room temperature for up to 5 days, or frozen for up to 3 months in a freezer bag.
