Cinnamon Swirl Cake
Our Cinnamon Swirl Coffee Cake is a simple breakfast treat that packs in the fiber and nutrients first thing in the morning without sacrificing an ounce of deliciousness. We use our Dessert Berry Blend that includes four whole grains - wheat berries, barley, and the ancient grain spelt- to get our whole grain diversification off to a great start early. However, this cake would also be a delicious brunch addition or after dinner dessert. Truly, why limit yourself to just breakfast?
This recipe was born out of my oldest boy's love for cake at breakfast. He is elated anytime that is an option....a boy after my own heart! It's tender, sweet, refrigerates well to serve the next day or for snack, and has a wonderful crumb. I'm pretty sure we both had three pieces the first time, because we think its just so good. Cinnamon Swirl Coffee Cake
Ingredients

Dessert Berry Blend |
4 tsp |
baking powder |
1/2 tsp |
salt |
1/2 cup | honey (sub: 3/4 cup white sugar) |
1/2 cup | unsalted butter, melted |
1 1/2 cups | milk |
2 tsp |
vanilla |
2 large |

1/4 cup |
unsalted butter, softened |
1 cup | sucanat* (sub: brown sugar) |
2 tbsp |
Unsifted flour (set aside from above amount) |
1 tbsp |
cinnamon |
1/4 tsp |
nutmeg |

powdered sugar |

Instructions
- Preheat oven to 350oF
- Mill 1 3/4 cups Dessert Berry Blend on “pastry” setting. Set aside 2 tbsp flour for filling.
- In a large bowl, mix together remaining flour, 4 tsp baking powder, 1/2 tsp salt.

Add 1/2 cup honey, 1/2 cup melted butter, 1 1/2 cups milk, 2 tsp vanilla, and 2 large eggs. After all wet ingredients are added, mix just until combined.
Pro-tip: Don't overmix here or the cake will fall. - Pour batter into greased 9x13” baking pan
- Using the same bowl, stir filling ingredients together until well combined (remaining 2 tbsp flour, 1/4 cup softened butter, 1 cup sucanat, 1 tbsp cinnamon, 1/4 tsp nutmeg)
- Drop filling evenly across top of batter using a spoon or your fingers, then swirl with a spoon or butter knife.
- Bake 30-35 minutes (200oF internal temperature)
- Mix glaze and drizzle on top of warm coffee cake
- Enjoy!
